5 Minute Cake in a Mug

I'll choose cornbread and catfish over sushi and lobster anytime. I attribute this to my southern upbringing. Comfort food is my thing and my recipes are quick and easy. KISS (keep it simple sister) is my logo.
Cake in a Mug
4 Tbsp. flour, 4 Tbsp. sugar, 2 Tbs. baking cocoa
1 egg
3 Tbsp. milk
3 Tbsp. oil
splash of vanilla
2 Tbsp. chocolate chips or nuts ( optional)
1 Coffee mug
Add dry ingredients to coffee mug and mix well. Add egg and mix thoroughly. Add milk and oil
and mix well.
Place mug in microwave and cook for 2 or 3 minutes, (start with 2 minutes). The cake will rise over the mug, but don't worry! It will settle down. Let cool a little and turn out on plate.
Serve with whipped cream or ice cream
This single -serving dessert is ideal for someone lacking will-power
( that would be me), who usually reaches for second helpings. You can share it with someone....or not.
